PROTEIN BANANA BREAD RECIPE

I AM OBSESSED WITH BANANA BREAD!! If the capital letters and exclamation points don’t show how much I love it, then I’m not sure what else will. Whenever I would go to a cafe, I would always eye the banana bread by the counter and I have always wanted to make my own. I love healthy food, so what better way to experiment with a banana bread recipe than making it yourself? I have gone through different versions of banana bread and have finally settled for the one below. This only contains 6 ingredients so it’s pretty easy to make and it’s a great way to use your ripe bananas 🙂 You can watch me in action making this on my IGTV here!

I think everybody has different taste when it comes to banana bread. My friend tried this when I made it and liked it but thought it could use more banana. My mom, on the other hand, thought the consistency and taste was perfect as she doesn’t love an overwhelming banana taste. At the end of the day, I think when it comes to following a recipe, you can always adjust and tweak things here and there to your liking.

The best part about this recipe is that it’s high protein and low fat. I love having this as an addition to my breakfast, as a mid day snack and of course it makes for a great dessert. Sometimes, I also like to add peanut butter on top for an extra treat. Either way, I am hoping you guys can try this and if you do, let me know what you think!

Ingredients

  • - 4 oz Greek Yogurt (I used Fage 0%)
  • - 2 Eggs
  • - 2 Scoops of Vegan Protein Powder
  • - 1 oz Swerve Sweetener (feel free to substitute any sweetener of your choice including sugar, honey, etc)
  • - 2 RIPE medium bananas
  • - 30 grams All Purpose Flour
  • - Optional seasoning: cinnamon, nutmeg
  • - Optional ingredients: nuts or dried fruits for the inside filling

Instructions

  • Preheat oven to 375° Faraheneit
  • Gather all of your ingredients as stated above
  • Crack two eggs into the bowl and whisk it
  • Mix the two ripe bananas in the bowl (I kept one half of a banana to add in later because I prefer banana chunks in the bread but feel free to mix it into a consistency that you like)
  • On a separate bowl, add in the greek yogurt along with the all purpose flour, vegan protein (I used Protein World Slender Blend Protein and you can get yours for 40% off by clinking here!) and sweetener
  • Combine that into the bowl with the eggs and banana and stir until you get a nice, thick consistency
  • Put parchment paper on your banana bread pan
  • Pour in the mixture into the pan
  • Bake in the oven for 35-40 minutes and check on it in 20 minutes to make sure everything is OK
  • Use a fork or toothpick when it's around 35 minutes to see if it's ready
  • Let it cool off
