I love snacking! I literally eat every 2-3 hours and love to be creative with my snacks. Rice cakes are a great option because they are low calories and there are endless options to satisfy your cravings. Today I wanted a peanut butter snack because I’m a sucker for peanut butter. I used the Peanut Butter Powder from PB2 as it has better nutrients than regular Skippy or Jifs, but literally taste the same and if not, even better. I definitely think I added a little too much water as you can see in the photos, but I didn’t mind since it was going to be on top of my rice cake.
I decided to go for strawberries and blueberries as my fruit toppings, but sometimes I switch it up and will add cinnamon and bananas or something savory like tuna and avocado (which I might feature in a future recipe post). Pop Sugar Snacks also sent me some of their bars to try and I was very excited because they are gluten free, dairy free and soy free superfoods. I love adding bar toppings to my oatmeal, smoothie and snacks because they are a great way to include some crunch and dessert like feature. The one I added today was the Peanut Butter Chocolate because I felt like it would be most appropriate with my overall flavor choice. I was very pleased with my creation and if you end up trying this, let me know what you think!
All you have to do is put peanut butter on top of your rice cake. Add any toppings of your choice and tada that's all! I chose to add blueberries and strawberries and peanut butter chunks from Sugar Popsnacks.
